My Go-To Baby-Led Weaning Egg Muffin Recipe

Ingredients:
- 4 eggs
- 3–4 tbsp cottage cheese
- 1 cup steamed broccoli (chopped small)
- Handful of chopped spinach
- ½ cup shredded cheese (I do cheddar cheese but whatever works)
- Avocado oil spray (for greasing the muffin tin)
I honestly don’t really measure, I just kinda eyeball it and it always turns out great! Now that my baby is starting to eat more, I will probably begin to doubling this recipe!
Instructions:
- Preheat oven to 375°F (190°C).
- Lightly spray a muffin tin with avocado oil.
- In a large bowl, whisk the eggs and cottage cheese.
- Stir in chopped spinach, steamed broccoli, and shredded cheese.
- Pour the mixture evenly into the muffin tin.
- Bake for 15–20 minutes or until the centers are fully set.
- Let cool before serving. Store extras in an airtight container in the fridge for 3–4 days or freeze for later.
Pro Tip: Use a silicone muffin tray to make cleanup and removal super easy. Here’s the one I use.
Tips for Serving to Baby
- Cut into pieces for easy grasping if your baby is just starting solids.
- Serve with fruit like banana or steamed apple slices for a balanced meal.
- Freeze in individual portions and thaw overnight in the fridge or microwave for 20–30 seconds.
These muffins have been a hit with my baby, and I love knowing he’s getting protein, fiber, and veggies all in one little bite.
