After a few months of trial and error, I’ve found a few things that make muffin prep so much easier:

- Let them cool completely before storing: If you pack them away while they’re still warm, they can get soggy.
- Add variety: You can toss in finely shredded zucchini, carrots, or even chia seeds for extra nutrition without changing the flavor much!

Blueberry Banana Muffins Recipe
Ingredients:
- ½ cup mashed ripe banana (about 1 medium)
- 1 large egg
- 2 tbsp melted coconut oil or butter
- ¼ cup plain Greek yogurt
- ½ tsp vanilla extract
- ¾ cup oat flour (or whole wheat flour)
- ½ tsp baking powder
- ¼ tsp baking soda
- Pinch of salt (optional)
- ½ cup frozen wild blueberries (thawed and drained)
Instructions:
- Preheat oven to 350°F.
- In a bowl, mix banana, egg, melted oil, yogurt, and vanilla.
- Add flour, baking powder, baking soda, and salt. Mix just until combined.
- Gently fold in blueberries.
- Scoop into lined or greased muffin tin.
- Bake for 20–25 minutes, or until golden and a toothpick comes out clean.
- Let cool completely before serving.

What I Serve These With
These muffins are super versatile. For breakfast, I usually pair one with:
- A scrambled egg or egg bite
- A few pieces of fruit (my baby loves any type of berries or bananas)
- A spoonful of plain whole milk yogurt
They also make a great mid-morning or afternoon snack if we’re heading out for a walk or errands.
Storage & Freezer Tips
Once they’re fully cooled, I store them in an airtight container in the fridge for up to 4-5 days. For freezing, I just make sure they are completely cooled and put them in a freezer safe zip-loc bag! To reheat, I pop one in the microwave for about 20 seconds or let it thaw in the fridge overnight. I typically will keep enough in an airtight container to last me 4-5 days and than get more out of the freezer!
